Using a woodfired oven

The outdoor pizza oven has become the quintessential backyard accessory, move over the BBQ!  You become a true pizza enthusiast the day a woodfired oven takes pride of place in the backyard - you become the envy of friends and family. But, there is an art to using one and getting it right, and I am sure there are plenty of fellow pizza enthusiasts that would contest to having to try and try and try again, but we would all agree the results are worth waiting for. There really is nothing like watching your creation bubble away in a woodfired oven, ready to eat in just minutes.

Quick Tips

  • Make sure you preheat the oven every time you use it. If you’re cooking pizza, it will take about an hour and half to get the oven to the required temperature.
  • Once the oven is hot, use a long metal-handled scraper to push the coals to one side of the oven, and brush the ash from the floor with a metal-bristled brush. The Oven is hot when the entire inside surface of the dome has turned white, this should take about 45 minutes from when the fire was first started.
  • Place the pizza on the oven floor using a pizza peel. The crust will begin to puff up and cook immediately. For an even cooking result, after about 40 seconds slip the peel under the pizza and rotate it 180 degrees.
  • Depending on the heat of the oven, cooking should take approximately 60-90 seconds.

Using a pizza stone in your kitchen oven

A stone absorbs moisture from the dough and provides a uniformly heated surface which results in a crispier crust. Pizza stones should be preheated before using, for about an hour. Sprinkle semolina or flour over the preheated stone before placing the pizza on for cooking. The semolina helps stop the dough from sticking and gives the pizza base a golden finish. An alternative to the pizza stone is a terracotta tile. As with the pizza stone, make sure you preheat and sprinkle with semolina or flour.
