Shaping the Dough Balls

Once the dough has finished rising, turn out onto a floured surface, handling gently. Cut the dough in half using a sharp kitchen knife.

Cut each half into 4 even sections. To shape dough into a ball, move to a section on the bench without flour. The dough ball needs to slightly stick to the surface. Form a crab with your hand and place over the dough and begin moving in a circular motion around the board until a ball has formed.

Lightly oil a baking tray. Place each ball onto the baking tray as they are made. Cover completed dough balls with a damp cloth to stop drying out until you are finished making all 12 balls.

Cover the baking tray with a sheet of baking paper. You can use glad wrap but you will find baking paper does not stick to the dough balls and is easier to remove. Leave the dough balls in a warm spot to rest for about 20 minutes. Dough balls should double in size. Now you’re ready to make a pizza base.
