Kneading the dough

Once you have mixed all ingredients together, turn dough out onto a floured work bench ready for kneading.

Knead for about 10 mins. Pushing the dough down with the palm of your hands and then folding together. Continue this action until the dough is smooth and springy (not so soft that the dough is limp but not too hard that its difficult to work with).

Once you have finished kneading, shape dough into a round ball and return to a clean bowl. Cover with clear film or a damp cloth and leave in a warm place to double in size – approximately two hours. It is important to leave the dough to rise until doubled in size otherwise your pizza base won’t have any rise.
