Its all about the protein
A secret known only to professional bakers … the key to the perfect pizza base is all about protein.
High protein flour contains more protein and gluten than standard household flour and creates a dough with greater elasticity, absorbing less liquid. You achieve a better rise and lift in the dough and the result is a light and crispy pizza base.
Look for strong flour in the supermarket with a 12% protein level. A flour with a protein level below 11% can produce a dough that is tough and chewy.

After a lot of trials (which was such a hard job having to taste all those pizzas!) We think we have found the one … the easiest and tastiest pizza base recipe.
